Potatoes with Salsa...

OK all,

New food adventure. I was hungry so I tried something new. I cut up potatoes into pieces. I seasoned them with Garlic Salt, Lawry's Salt, and Butter. Don't be skimpy. Then I dumped a 1/2 a can of salsa on top. I covered the pan with foil, and baked it in the oven for 1 hour at 450 degrees. You know what it was so so so so good. Man I keep surprising myself with new things.

Sopapilla Cheesecake

2 cans crescent rolls

2 8-oz packages of cream cheese (allow to soften)

1-Cup Sugar

1 tsp Vanilla

1 stick butter (Melted)

Topping:

½ cup sugar

1 ½ tbsp cinnamon



Spray 9x13 pan with Cooking Spray. Pre-heat oven to 350 F. Spread 1 can of crescent rolls on bottom of pan. Mix together cream cheese, sugar and vanilla. Spread on top of crescent rolls. Cover with second can of crescent rolls. Pour melted butter over top. Combine cinnamon and sugar and sprinkle over top layer.

Bake 25-30 minutes.

Okay, decided to make that one myself tonight. It's in the fridge cooling now. Looks delicious. Used a 9-inch pie pan instead of a rectangular pan, replaced the sugar in the filling with Splenda, replaced the cream cheese with low-fat cream cheese, and cut out half the sugar in the topping, because, since this is supposed to be a sopapilla cheesecake, I'm gonna drizzle it with honey!

Gonna try your potato recipe sometime this week. I think it could be improved with some shredded cheese on top, though.

Oven-Fried Fish

2 Teaspoons meleted butter
2 large eggs, beaten

2 tsp milk

1/2 cup corn meal
1/cup all-purpose flour

1 1/4 tsp paprika

3/4 tsp garlic powder

salt and pepper, to taste

2-3 lbs fish fillets

Preheat oven to 400. Coat 13x9 baking dish with butter. Combine eggs and milk in bowl; combie cornmeal, flour, paprika, garlic and salt and pepper in another bowl. Dip fish fillets in egg mixture, coating both sides, then into cornmeal mixture. Place in prepared dish and bake for an hour or until fish is flaky, turning fillets 1-2 times.

Also works pretty well with chicken...
